Figure out what is best for your situation. In theory Bootcamp will offer superior performance as long as your mac is intel based. It also makes nexusmods much easier to manage and use. The downside is the cost of Windows and the partition itself. Wine is free and can use Steamworkshop mods with ease but performance is not as good.
I've played 200+ hours using the wine method. Considering switching to the bootcamp method. UPDATE: I just switched to the Bootcamp method.
The difference is incredible. I HATE Windows 8.1 as it is the absolute worst operating system ever created. But damn, Skyrim runs flawlessly. My Specs (I use the Wine Method UPDATE: i now use the bootcamp method and its awesome.). Processor: 2.5 GHz Intel Core i5. Memory: 12 GB 1333 MHz DDR3.

I can play with the above specs on Ultra settings with zero mods. When i use mods i use High settings with a few custom tweaks. How to use Nexus Mods (Using the Wine Method). Step1: Use. SKSE works easier with bootcamp TDLR; USE BOOTCAMP. Basically its a matter of principle for some mac users who are dedicated to the OSX software. Its also a matter of going through the partitioning process which some find daunting. And you have to obtain a copy of the windows software.
You do get better performance doing bootcamp from what i've heard and read. I'm actually considering switching to that method since using nexus mods with bootcamp is a lot easier than the wine method. Whereas with wine, you don't change anything and you only purchase the game. Its a headache at first to understand like all new things, but allows you to play the game and still run OSX and do other things. You don't install steam through wineskin at all.
You simply follow the instructions as provided. The winery allows the use of the wrapper, the wrapper once properly set up allows access to steam which will download the game. You need to set up the wine tricks(this allows it to connect to steam) properly and make sure the wrapper is updated to the newest engine. (this is in advanced settings). The wrapper that i linked works perfectly, and Dantheman who is the author has included step by step instructions for the use of the wrapper.
Yes, depending on the mods you have downloaded you may need to create the respected folders for the paths to work properly. Manually installing can be confusing and time consuming. I highly recommend that you download the nexus mod manager. Its free, just create a free account on the website. With the nexus mod manager you can download directly, and have everything nice and organized. When mods conflict, its easy to check which ones load and makes for faster troubleshooting.
If you manually install mods, its a nightmare to figure out the possible conflicts.

I don't install any mods until I get the vanilla baseline FPS as high as possible. After I leave Helgen, I go through INI settings, testing the threshold of quality/performance and get all my vanilla game settings running as smoothly as possible. Then I have a light, effortless base to start applying mods to.
I start with the Unofficial Patches, SkyUI, my PS3 controller profile and my ENB of choice - Stakado Cinemascope. Once Im happy with all the core stuff, I assess my old favourites, see if there are any new ones I build my load order manually, by grouping the following categories together in this order. Skyrim/Update/All DLC Unofficial Patches/SkyUI/iHud World/terrain changing mods (eg ETaC, W.A.T.E.R.) New Lands/Quest/Quest Altering Mods (eg - world eater beater, Falskaar, immersive college of winterhold etc) Weather changing mods (eg Rain, Snow, Wet & Cold) New content mods (armors, weapons, player homes etc) Follower mods (arissa, inigo, sofia etc) Character/NPC mods (dialog, population, behaviour) Animal/beast mods (wolves, horses, trolls, skeletons etc!) Gameplay mods (economy, trade, hunger, lockpicking, smithing) Combat/Action related mods (enemy AI etc) Warburgs Paper Map last! More and more time it seems. For the current play-through it took me a whole month. But at first 1-2 weeks I was just exploring different overhauls, then I moved back to Requiem.
It took me a whole week afterwards to set it up, then another week to change patches, load order, etc. I had to restart so many times I almost gave up. But it worth it. It seems I am settling for less and less imperfections as time goes on. My first couple of play-throughs there were severe incompatibilities, stability issues, but I did not care as much as now. The mods I use are becoming more and more complex as well.
